Best brett taste?

Wed Feb 23, 2011 11:18 pm

I had some ThirstyBear sour stave ale this evening at Beer Revolution, and I'm trying to decide if I like Brett flavor or not. It's hard to disentangle the lacto from the brett in this particular beer, and I'm kind of wondering what beer would be the best showcase of brett flavors. Doesn't necessarily have to be a *good* beer, but I want to find out if I actually like this stuff. I think I might, so I'm trying to experiment.

Even though Sanctification is all-brett with regards to yeast, there is a lot of pedio flavor as well, wich might make it hard to get an impression of the brett by itself.

Victory Wild Devil is a good one for lots of funky brett character. Drakes has done a lot of barrel stuff with brett but those usually seem to only come out for festivals. The Bruery uses brett in their saisons, though it isn't always very apparent. We need more easy to get brett beers!

Just brew a small batch of beer and funk it up. I took 3 gallons out of one batch pitched brett C. into that in a 3 Gallon carboy. That was 10/15, I've tasted it once its good, I just need time to bottle the small batch now. Since I had the base beer fermented with I think British Ale yeast and still have some of those bottles I get to compare side by side the flavors.

The Mikkeller stuff is a super over the top, in your face brett monster. Go drink that and an Orval and you'll have a better understanding of what brett can do by itself or in tandem with ale yeast.
