D-Rest for Oktoberfest Ale

Tue Aug 10, 2010 10:05 am

I swear I'm not Villam reincarnated. I have an Oktoberfest Ale in the fermentor that I am going to keg this weekend. I used WLP029 - Kolsch yeast at 65 F for 7 days and went down then down to 60 F for 2 weeks ( which will be this weekend ).

Should I do a D-Rest on this before crashing? I was going to crash to 39 for a couple days and then keg where it will sit for 2 months.

Thanks.

I have used that strain at 58, 62, 66, and 68 and I have never needed a d rest.
