Mason Jars in Autoclave?

Wed Aug 04, 2010 7:09 am

I want to sterilize my wort for later use in mason jars. I have access to an autoclave at work. I know Jamil pressure cooks his starter wort so I assume the mason jars can withstand the autoclave? Does anyone have experience with this? If so, how tight do you leave the caps? And once finished, can the starter wort be stored at room temps or does it need to be refridgerated? Thanks!

How do autoclaves differ from canners/pressure cookers?

When using the canner, I put the rings on light finger tight.

They should be fine. A pressure cooker basically is an autoclave. Some autoclaves can go up to 30psi range (270F) vs. the 15psi (250F) that most pressure cookers can do but the jars will hold up fine either way. It's more about how fast the heating/cooling cycle is rather than the temp.
