and i have done side by sides, to my palate s-05 is a bit less malt accentuating and takes longer to floc vs. 1056. but the difference is way to small for me to justify the price difference

So, time to step out of my comfort zone here. In the past I've always ordered all my supplies other than yeast from Northern Brewer or Brewmasters Warehouse or B3 and have just picked up my yeast from the LHBS since White Labs is in San Diego, I like support the Whites, as a local business, and I'd rather not have to order my yeast from far away and have it sit in a box for a week during shipping.

I visited my LHBS during lunch today planning on picking up some DME and some WLP 001. Much to my disappointment they had zero WLP options I could use. No 001, no 002, no 007 so I picked up 2 pakets of US-05 and will have to make due with that I guess. Soi much for supporting the LHBS. I'll just order my yeast from now on.

So, I've never brewed with anything other than White Labs yeast. Should I build a starter with the US-05 or should I just pour a packet into each carboy on Sunday and cross my fingers?

No starter needed. You will need to proof your dry yeast. There is exponentially more yeast in an 11g packet of dry yeast than in a vial. Pitching one proofed pack will be PLENTY of yeast, if anything, you might overpitch. I don't have #'s in front of me right now, as I don't rock the dry, but hey, it works for so many people! Don't sweat it.

I'll boil some water, cool it down and proof each packet in about a pint or so of that water.

so, brewing yesterday was pretty uneventful. Went off without a hitch even using the hop back which normally is a pain in the ass.

I got the wort into the carboys, proofed the yeast in some of the wort actually and pitched it. I didn't see any activity last night at all, but there was a nice big krausen this morning.

Can't wait to drink it. It's got 7.3oz of hops in it already and I still need to dryhop it.

It's better to use water. The yeast cells can't control what passes through their cell wall when they are rehydrating.
