first time racking on top of previous yeast cake

Mon Nov 09, 2009 6:50 am

I brewed a brown wheat last night and decided I'd rack my Bugeater's Oatmeal Raisin Cookie to secondary and use that yeast cake for my brown.

First time I've done that, and it was really rattling the airlock in about 2 hours. Kind of surprised at the quick take off, almost expected to wake up to a blown airlock and beer dripping from the ceiling.

Be sure to keep that temp under control or your beer will have a ton of fruity esters and nasty fusel alcohols. Next time just pitch one sanitized cup of yeast from your cake into the beer and it will still take off fast, but allow the yeast to grow which will produce good flavors for your beer.
