WLP-001 & US-05 help

Tue Dec 01, 2009 7:22 am

I will be going to a single vessel to ferment in soon and wanted to do a last test on these yeasts. I did a 2.5l starter of WLP-001per Mr.Malty and 1 package of US-05 proofed brewday. Brewed a Janet's Brown.

The 001 kicked up first and even blew out the blow off tubes. US-05 got close to blowing out but did not.

After 7 days US-05 has hit the final numbers and I dry hopped it. 001 is almost 8 points to go, WTF? So now I have to try and warm it up or repitch some dry to get it down? Both in the same cooler so kinda not sure where to go with this now.
Shut up, Mr. Burton! You are not brought upon this world to get it!

Warm it up and let it go another week or 2. If it's still too sweet, blend it with the US-05 batch.

Just give it more time. Either way I will always use the fermentis US-05 instead of the 001. Easier, cheaper, and identical characteristics (at least as far as I can tell).
