I live in TN, they have bigger fish to fry as far as distilling goes. :)

On a side note, I think I figured out where the off flavor is coming from. I started preparing a corney to rack this batch off to and some other equipment to take a sample. I took a close look at my auto-siphon and saw some blackish mold growing on the end of the plunger on the racking cane. I have only been letting it soak in oxy-clean solution then pumping it about 20 times to circulate. Then repeating the process with sanitizer. After finding this I took it apart and examined it more closely. There's a deep crevis on the plunger that is perfect for sticky wort to get lodged into.

I took a sample of this batch and the bad taste has sub-sided quite a bit but it still has some residual bad taste. I can probably drink it though. It's down to 1.010 so after soaking my corney over night and such I'm going to keg it and force carb it to see if it's any better carbed up.
