Those are a bit old, but I would go for it regardless. US-O5 is a strong fermenter and stores well esp. if it was in the fridge the whole time. Rehydrate properly, pitch it, aearate well, don't make too big of a beer, and meanwhile go get some fresh yeast just in case you need to repitch if it doesn't take off! Let us know how it went. Always interested in hearing about yeast and viability issues.

Just an update, I proofed the yeast, and dumped it in. That thing was rippin' in a few hours!

Can't wait to taste my first all grain batch. [pics in the all grain thread]

Thanks for the update..Nice job on the pics with some helpful tips for yourself to remember in the future. This is the beginning of better beer for you and your friends! Year old yeast still rippin up the maltose! SWEET!!!
