And what if the numbers were too optimistic and not as realistic? Then people would be pissed that they were not aware that it could be so bad. One hot day in a UPS/FedEx truck is all it takes to make the viability nose dive.

The best before date on WL is 4 months for yeast, 6 months for bacteria and brett. Just hover over the fields on the calculator and it will pop up lots of useful information.

Pope, with all your holy power, I expect you to be able to channel your energy to read the exact viability of each unique tube/packet of yeast we use. :jnj

In all seriousness, I greatly appreciate the calculator -- I live by it when it comes to my fermentation. I know the general conditions that affect yeast health, I suppose I need to learn more though so I can decide for myself what risks I'm taking after 3 months.

Jamil,
I love the calculator, just commenting on my experiences with yeast performance compared to the viability calculator. To me the calculator is a great tool, but there will always be that small amount of mysticism and brewer's experience that goes into yeast handling, which you have rightly stated on numerous occasions.

Me experience too suggests that I get much better viability from my stored slurry. I want one of these. I don't know how difficult it is to count dead and live yeast and I don't have a microscope yet. I think one might make me a better brewer. Getting real cell counts and being more able to diagnose contaminates would be a good thing.

Not to mention that different yeast strains have different viablities over time.... Im guessing you just took the mean viability of yeast and applied that as a general rule?
