starter temp for kolsch and alt

Sun Sep 07, 2008 11:37 am

so, my next two brews will be jamil's kolsch and alt. question is: would it be better to make the starters for these brews at the fermentation temp of 60F, or at something more suited to a growth phase like 70F. i'm thinking of going with 60F just to keep the yeast acclimated to the temp they will be working at.

When making a starter you are going for optimal yeast health and growth so the higher temp is just fine. When pitching, however, you want to have your starter at or a little below the temperature of the wort.

I put my starter in the lager fridge at the same temperature I am going to ferment the wort at...

I'm with Boog, here. You want optimum growth. If you are concerned with "off" flavors from the higher starter fermentation, you can chill and decant. He's spot on for the pitching too - at the same temp or slightly below.
