So I remember an episode where mike was kind enough to share the recipe for this mead. Does anyone have the episode number or the recipe? Thanks

71B yeast

Cinnamon and vanilla bean added post fermentation.

Thanks.... i found a beersmith episode with him talking about 25% honey and 75% juice. Is that by weigh or volume? Im only doind a 3 gal batch so im just trying to scale it down correctly

15# of honey roughly comes out to 1.5 gallons. The numbers I gave were for a 5 gallon batch, so you should be able to scale down from there.

Thanks man... i made it and boy is it strong. I thonk i may have added a lil too much vanilla bean and cinnamon. I added 1 stick and 1 bean for about a 2 wks. It lil harsh..

Moonlight mead man (Michael?) shared the recipe on the mead episode of Brewing with Style and then gave some further process details in a Brew Strong episode which either focussed on the meadery or general mead Q&A.

Have a listen to both and put the pieces together. I've got a small batch aging in the fridge now which I'm hoping will be good for Sth hemisphere winter! Having not made a cider before or had much success with mead it doesn't seem as sweet as other moonlight mead I've tried - but a bit of age won't hurt it - the real stuff get some aging time too according to interviews.
