That brought back memories. My grandpa used to make the stuff. He eventually used pork hocks when the head was just not worth getting/too hard to handle in his old age. We used to spread it on crackers with salt and pepper. Goddamn I miss that stuff. I'm going to have to get the recipe from my grandmother. Too bad he died before writing it down :(

I need to get off my lazy ass and make some venison sausage. I've got about 25# of ground venison sitting in the freezer just begging to be made into smoked summer sausage.
