Cornbread

An easy recipe that goes well with BBQ (ribs, etc).

Cornbread:

Place well seasoned cast iron pan in oven (I use 7" round - see photo below)
Preheat oven and pan to 400-425F for 1/2 hour
Mix 2 boxes Jiffy 8.5 oz cornbread mix with
2/3 cup milk
2 eggs
Add fine diced peppers (jalapeno, serrano, habenero, etc.) I typically use two of the first and one of the seconds
2 handfuls (2 loose cups?) of grated cheese - i like a cheddar / jack mix
Mix and let rest for 5 minutes
Place 1/2 (or full) stick of butter in pan in oven and let melt (but not burn)
Pour mix in pan and bake 25 minutes
Take out of oven, let cool 5-10 minutes and enjoy

MMMMMM I love me sum cornbread

The cast iron skillet I cook mine in is from my grandparents, it has to be over 60 years old.
