Lamb! Yum!

Weird thing, but I can always find 'em at Sam's Club. Dunno what you call the cut. It's 8 ribs but doesn't have that big pad of meat and fat on the top. Price is very reasonable. I also find the french cut (4 ribs) at Wally World, usually in the discounted section.

I do mine the other way around. Charcoal fire and slow cook on the opposite side from the fire 45 minutes (no turning). Then 5 minutes per side over the (now nicely reduced) fire. There's still some issues of fat dripping and flaming up, but I can deal with it.
