A New Years Tradition in our house.

Kapusta (Pork & Saurkraut)

3lbs. Country Style Pork ribs
1 small head cabbage (blanched)
1lb. Saurkraut
2-3 diced tomatoes
3Tbl barley
3Tbl brown sugar
fresh dill
bay leaf
10 black peppercorns
season to taste

simmer for 1 1/2 hrs.

serve w/ potatoes and rye bread

....and don't forget your favorite glass of homebrew. :D

The French use their feet in making choucroute

And when it's done, you garnish with pork, (belly (unsmoked bacon), shoulder, sausage and knuckle) you gotta love the French! I'm ready to check out Strasbourg.

Throw a couple of Gwumpki's in with that kapusta and then you have a meal! Had that for dinner tonight, with a freshly kegged porter! Polish cuisine at its finest ( ps bluesman, throw some chestnut mushrooms in that kapusta, what a difference it makes!) Tommorrow morning its gonna be Kapusta and Keishka...and porter
