Hey Ya'll,
Greetings from not-so-sunny North Carolina! Just checking out my Skype (OK, that joke's probably a little dated, but I've been catching up on The Session for the past three months.) I've been brewing for 2 years, AG for 1.5 years, and have been addictive about it for about 6 months. I've listened to Jamil for about a year and have stalked the board for a while now. Thanks in large part to the BN, my beer has gotten a little too drinkable. Thanks for all the imparted knowledge so far and I look forward to more ravings from you crazy fuckers.....

I take it you like Kolsch!? Do you filter it? I tried it several times before I had a filter and could never get it to drop enough, even after 6 weeks at 30F. That WLP029 just won't lay down!

Yeah, I make a lot of kolsch, for the wife and in-laws. I switched to Wyeast 2565 and it changed everything. I go about 3 weeks on primary, then secondary with gelatin finings for another 4 at 38-40 degrees before kegging . Also, I use straight pilsner, no add-junks (wheat, munich, etc). The head retention suffers slightly, but it doesn't last long enough in the 2cl Kolsch stanges I serve it in for anyone but me to notice. I'm tinkering with mash temps and technique to improve the head, but I'm happy with it, all in all. I think the key is letting it settle in primary, and leave as much behind as possible when you rack. Hope this helps.
