Just sayin' hey

Hey BN'ers,

Just poppin' in to say hi. I live in Central IL and have been brewing for almost a year now. Still doing extract & partial mash only but loving the fruits of my labor! I was just turned onto the Brewing Network about 2 months ago when reading BYO magazine.

I have also made about 3 batches of gluten free beer for my wife (who has Crohn's Disease). So after she approved of the beer, I now have her full support and can pretty much brew whatever, whenever.

So thanks to Justin & the BN crew for putting out such excellent FREE information on brewing & craft beer. You're the best. And I look forward to learning even more and cranking out great beer!

Hey gang. So thus far I've made 3 or 4 different batches. All started with a very basic Pale Ale recipe from Briess. It was essentially 6lb of Briess light sorghum, 3oz of Cascade hops & either raspberry purée (3lbs) or frozen cherries (4lbs sour/2lbs sweet).

My wife seems to truly enjoy the beers. I however, feel like it needs more carbonation, head retention & better "true beer" mouth feel. Just feels more like a sparkling wine to me

I'm very interested in trying some of the recipies found on www.glutenfreecraftbeer.com. Luckily my local homebrew shop carries all of the ingredients except honey. But conveniently, there is a health food store one block away that sells honey by the pound!

Good luck with your ventures everyone. I hope to learn a lot of great secrets & share some tried-&-true recipies on this forum. If anyone is interested, I'd be happy to post my recipies.

I just sampled Steadfast Beer Company's Sorghum Pale Ale gluten free. Better than I expected for a gluten free! The molasses as a fermentable kind of glued the hops to your palate, but it wasn't objectionable. Their web site has some info about the beer. Check it out if you are looking for a direction to go in when designing a brew.
