Spice "extracts" for witbier

Wed Apr 12, 2006 12:59 pm

I'm making a wit soon and here's my plan for spices. I have them all soaking in vodka right now. In a couple weeks I'll be racking to secondary. When I do that, I'll take a sample and add the extracts to it drop by drop until I get the right flavor/aroma. Then I'll add the same proportion to the secondary and rack on top. I'll err on the low side so I can add more later if I underdo it.

Seems like I'll preserve maximum flavor and aroma (no scrubbing, no boiling), have sanitary spices, not have to worry about the chunks of spice clogging my siphon, and be able to precisely add the right amounts.

But if that were the best way to do it, everyone would, right? What's wrong with this approach?

Just more work. A better way is to put X amount in 3-6 different 12 oz bottles, choose and then scale up. But hold back to 75% when you add it to the keg and add more if necessary. I was doing the same thing tonight (and last Sat) If you're going to add something (spices ) after the brew, then it's a crap shoot. Titrate it up up the level you like.

There are many ways to doing things. That's what's so cool about this hobby!
