This was a great episode.
Does anyone know why the juniper twigs are added at the end of the mash rather than the start of the mash?
Maybe the taste would be too strong?
I am going to make this one today. :wink:

I'm guessing it is because the twigs make the mash difficult to stir. Also the act of stirring the wort messes up the filter bed that is created.
I did a four step mash and added twigs and berries that I gathered from the country to the third rest at 152'.
the wort tastes pretty awesome!
I can't wait to taste the beer.
