Homebrewed Porter - my first beer of my NHC2009 vacation. Finished work last night, and we fly out tomorrow.
The porter is very green - brewed it 3 days ago and pitched onto 2nd generation yeast cake (Cal Ale). Started fermenting almost immediately and by the time I woke up the next morning the temp had risen to 72. I gently tried to drop the temperature by placing the carboy on the basement floor, and got it down a few degrees over the next 24 hours. When it finally got down to 68, the foam on top had settled down, and I figured "great, a stuck fermentation because I dropped the temp too quickly, and now I have no time to rectify this before heading to CA." But I took a gravity, and it's down to 1.012 already, so I guess the yeast has already chowed down.
I'll be moving on to a glass of my Maize Chipotle Ale (to wish it luck in NHC second round) and then will finish out the day by putting a dent into my new hummer of 60 Minute DFH.
