Wet Hopped Amarillo IPA Recipe

Ok here is my initial recipe for my wet hopped Amarillo Beer

I went with my basic IPA Grain Bill and well I will have a pound of wet amarillo so I am going to use it all...lol Obviously i just made a guess at the IBU's for the fresh hops

EST OG: 1.068
EST FG: 1.013
EST SRM: 7.1
EST IBU: 67
EST ABV: 7.1%

12.50 lb Pale Malt(2Row)US( 2.0 SRM )
1.50 lb Munich Malt - 10L(10.0 SRM)
0.75 lb Cara-Pils/Dextrine(2.0 SRM)
0.75 lb Caramel/Crystal Malt-30L(30.0 SRM)
0.25 lb CaraMalt(38.0 SRM)

2.00 oz Fresh Amarillo [2.50%] - Mash 60.0 min

Mash at 151F 60 Mins Mashout for 10 mins

1.00 oz Fresh Amarillo FWH 45 mins

Recover 8.50 Gallons in Brew Kettle (extra to account for losses due to large quantity of hops)

1.00 oz Columbus(Tomahawk)[ 14.00 %] - Boil 60.0min 32.2 IBUs (Pellet)
1.00 oz Simcoe[13.00%]-Boil 20.0 min 18.1 IBUs (Pellet)
2.00 oz Fresh Amarillo[2.50%]-Boil 15.0 min 5.2 IBUs
3.00 oz Fresh Amarillo[2.50%]- Boil 5.0 min 3.1 IBUs

Ferment at 65F for 3 days then bump up to 68F to finish
Dry Hop
4.00 oz Fresh Amarillo[2.50%]-Dry Hop 4.0 Days 0.0 IBUs


I know it is a ton of hops...but well gotta use them quickly...and they do not pack as much of a punch as dried hops...I have heard to drop the Ibu's by a factor of 6.

anyone have any suggestions/ideas?

Just remember that the same cone weighs about 4 times as much wet as it would dry. So if you would normally use 1 oz use 4 oz instead.

It's not that they don't pack the same punch or have less IBU's (although this may be a work around for software), it is as Danny said, cone per cone they will contribute the same as dry, but a fresh cone is much heavier than a dry. The exact amount more can vary, but I figure 5 times as the math is easy... (1oz fresh = 0.2 oz dry)

Here, you are only adding the dry equivalent of 0.4 oz at 15 and 0.6 oz at 5 min... and are going to lose your aroma from those additions. That's really what you want fresh hops for, I'd skip the mash and 45 min additions, cut out the dry (don't want them to start molding before you add them), and add all your fresh Amarillo between 5-0 in your boil.

You're paying a premium for hops that have never been dried. What is lost between wet and dry hops are some of the more delicate aromatic compounds that get driven off easily in the process.

what if I brewed a beer ahead of time and dry hopped it with the lb of amarillo? can i fit a lb of hops in the fermenter? lol

If you were doing your ferment in a bucket, you probably could... likely end up with more O2 pickup than hopping with pellets.... the problem is that unless you are harvesting your own, planning a beer in advance to have it timed right to add fresh hops is gonna be tricky. In my experience, shops that are getting fresh hops sent in from the growers don't know when it is coming in until they call to say it's coming... which may not give you enough advance notice to get something going.
