This is probably remedial for most of you, but I have a question about storage. Once beer has been force carbonated and bottled (using a Blichman BeerGun), can I store it at ambient temperature, i.e., 68-70 degF? Or does it need to be kept cold. I'm running out of frdige space.
Thanks!
KJ

Yes, but it will age better at cooler temps.

storing kegs at low to mid 70s for more than a few months SUCKS... i had to drink mine pretty fast or they would stale on me.

Not to contradict others here, but it depends on what you are looking for. The warmer the ambient temp the faster beers age. So for a wheat beer it is better to store them at cooler temps (fridge temps). For beers that I want to age out I like to store at cellar temps (55 - 65), this is true for most of the high grav stuff, such as RIS, Barley wine, etc... I find this helps them develop faster, However, guess I should state this is not always the case. Double IPA's and such (High hopped) I tend to keep cold from the start in order to try to perserve hop flavors.
