souring a carbed beer

Wed Nov 03, 2010 4:42 pm

I have a wheat beer that I am not very fond of. I have an extra carboy so I thought of trying to sour it.
It is kegged at the moment, I was wondering if anyone has tried doing anything like this to a beer that is carbonated like this?
If so how did you go about it?
I would assume I would degass it and then just rack it into the carboy and pitch the bugs and let it sit.

Sounds good to me. Put it out at room temp for a day or two with the keg's pressure release valve open.. cover the valve with tin foil if you like being overly cautions. Then either rack or push the beer out into a secondary fermenter, pitch an active starter of bugs, and wait a year.

I would just toss a souring blend in there, not let it go spontaneous. Who knows what you have going.
