Two step brewing

Mon Oct 26, 2009 6:33 am

I have a 3 gal. brew kettle and want to try "Texas two-step" brewing to avoid the caramel flavor I get from partial boils.

1) If I do two boils over two days, should I add all or part of my starter to the first half-batch?

2) Can you simply take a 5 gallon recipe and cut all the ingredients in half to make each half-batch? I also have several lab-grade 9.9 liter Pyrex carboys I want to use for small batches and I'm trying to figure how to adapt 5 gal. recipes.

I'm saving for a 8 gal. brew kettle and propane burner but in the meantime, any tips for doing this two step method would be greatly appreciated.

Pitch your starter into the first half batch. Things should be rockin' by the time you pitch the second batch. Scaling recipes in these quantities doesn't require any extra math. Just divide or multiply as you wish. When you get to scaling up to several barrels then ingredients need to be adjusted. Good Luck!
