I'm no longer a virgin - your B3 American Amber Ale extract kit was my brew and I did it today.

I think it is OK to leave all the star-san foam in the carboy and transfer wort? It was draining upside down for 5 or so minutes, all the liquid was out, just the foam.

I think so too. A smart guy once told me that the Star San residue in a 5 gal carboy added about as much potassium as is found in a 12 oz can of Pepsi.

The foam is your friend, drain as much that will come out then transfer.
If anything lands on the foam in the time between, it will die.
Just don't pull a Justin and leave 2 gal's in there.

I was told everything would be OK with a couple of shots...

And there is a creme you have to use for a couple of months.
