Smoked Scotch Ale = Stout??

Wed Sep 10, 2008 3:55 pm

I recently bought the Smoked Scotch Ale Kit from morebeer and I have little interest in actually brewing it. I would prefer to make some sort of big stout out of it but would like some feedback.

The soaking grains consist of:

1lbs Crystal 40L
8 oz Aromatic
4 oz Special B
4 oz Peated
2 oz Black Roasted

I would obviously add some roasted barley or black patent to make it a stout but I'm nervous about the Aromatic Malt and the Peated Malt. I have a ton of malt extract (both dry and liquid) so after I figured out my grains I'd concentrate more on how much extract to hit a nice big OG. So there you go, any feedback is welcome and thanks in advance.

Well sort of, I purchased the same deal of the day a couple of weeks ago (estimate). I wonder if they are trying to get rid of the smoked peat malt or something along those lines.

Are the grains already cracked?

Yeah the grains are cracked. I meant to make use of them earlier but I came into a ton of fresh hops unexpectedly and have brewed two fresh hop beers the past two weeks (I still have 7+ lbs of willamette hops in the freezer). I'm on the verge of getting rid of the grains, the cost to get more precise about what I want to do isn't that much and that peat smoked malt makes me too nervous.

What ever you decide to make, don't use the peated malt.

Agreed. If you intend to make anything other than a peat smoked ale don't use the peated malt. If you want to make that grain bill a stout, replace the smoked malt with chocolate malt.

Why don't you want to make the scotch ale? They're tasty...

And he said the grain was already cracked... so I would assume that means it's mixed as well and getting the peat malt out would be impossible.

I say that the ingredients there just don't lend themselves to making a good stout. Make the Scotch Ale and be done with it. You may be pleasantly suprised and really enjoy it...
