Covering them in boiling water for 10 minutes and boiling them for 10 minutes are two different things. The small amount of water is going to cool pretty rapidly and you don't have the churning action of a rolling boil I doubt you get much isomerization.
I still say you don't even need to do the 10 minutes soak ... if the purpose it to sanitize.
