FG is right around 1.017 today, airlock isnt bubbling any longer so Im thinking about bottling Saturday. Its tastes and smells awesome. Im estimating 10% ABV (subtract last reading from first reading right?) Thanks.

I bottled Saturday evening, just before I removed the airlock I saw a bubble roll thru so I waited about 5 min but didnt see any more activity. The whole kitchen smelled so sweet and wonderful, and it tasted great. Im not gonna even crack one for 3 weeks if I can wait. I did save some of the yeast and I plan on doing a small one gallon double IPA to see if I can get something interesting. I finally bought an auto-siphon and boy was bottling day a more pleasant experience at my house...piece of cake.

Be wary of re-using yeast that has been used to ferment out a strong ABV% beer. This yeast will be tired and probably slightly mutated from the strong alcohol presence. Especially if you are going to ferment another strong beer with it, you are better off starting over with a fresh pack of yeast and making an appropriate sized starter(s). You will be happy you did.

thanks for the advice about reusing the yeast. a couple people have said that, thats why I was thinking about just doing a 1 gallon batch.

Just thought Id give a little follow up on this Tripel that so many people helped me with. It carbonated well. I knew I had some scorching during the boil, I guess I didnt turn the fire off when I added the sugar (dumbass). Next time I will also add it late in the boil because I prefer a lighter color. Some nights I love it, some nights it has a strong licorice taste that I dont like. Tonite its great, but its the first beer Ive had today. Some friends LOVE IT, which is awesome, almost as good as loving it myself. It has a beautiful head to it, a nice thin lace (purely by luck). All in all, I was really worried that it was a dumper, so I am very encouraged. I learned some important lessons, and not having to dump it is like a bonus. Thanks for all the input I received.

Glad to hear that you are enjoying the fruits of your labor. If you have the ability to do so, take 6-12 bottles and keep them in your fridge for a while (few mos). I bet you will see some major improvements in these over time.

I just thought I would post a follow up on this thread for the newbies like me. I am drinking a bottle of this beer right now, and a couple months at 64-66F have done it very well. It carbonated well, and mellowed a bit. Glad I didnt dump it. Thanks everyone.
